Cleaver Casing started in a garage in rural Wisconsin, not in a boardroom. It began with a jammed sausage stuffer, a ruined batch of bratwurst, and a promise my grandfather made me repeat every autumn: 'measure twice, grind once, and never trust a knife you haven't sharpened yourself.' That garage is still standing, and it's still where most of our testing happens today.

Who's Behind the Cleaver

My name is Daniel Okafor, and I founded Cleaver Casing in 2019 after fifteen years of processing my own meat — first as a hobby passed down from my grandfather, then as a part-time custom butchery service for neighbors, and eventually as a full obsession with the tools that make or break the craft. I've broken down whole hogs on folding tables, stuffed thousands of feet of casing by hand, and ruined more grinders than I'd like to admit by rushing through partially frozen chuck.

I'm no longer working alone. Our small team includes Marisol Reyes, a former meat department manager with a decade of commercial cutting experience, and Tom Whitfield, a retired USDA meat inspector who now obsesses over food safety details most reviewers never think to check. Between the three of us, we've handled just about every grinder, stuffer, vacuum sealer, smoker, and boning knife on the market — and plenty that never should have made it to market at all.

Why We Started This Site

When I bought my first real meat grinder, I read a dozen 'best of' articles that all recommended the same three models with the same recycled marketing copy. None of the writers seemed to have actually ground meat with the machines they were ranking. I bought one anyway, burned out the motor on my second batch of venison, and decided the home butchery community deserved better than affiliate-driven guesswork. Cleaver Casing was built to be the resource I wished existed back then: written by people who actually process meat, for people who actually process meat.

How We Review and Choose Products

Every recommendation on this site comes from real use, not spec sheets. Our process includes:

  • Hands-on testing with actual cuts — pork shoulder, venison, beef chuck, poultry, and fatty trims — not just water or soft foam used in manufacturer demos.
  • Multi-session use over several weeks to evaluate motor stamina, blade retention, seal strength, and how equipment holds up under repeated, realistic workloads.
  • Side-by-side comparisons within the same price tier, so a $150 stuffer is judged against real competitors, not against a $600 commercial unit.
  • Food safety review by Tom, who checks sanitation design, material grades, and whether a product meets standards we'd trust in our own kitchens.
  • Long-term follow-up, where we revisit past reviews after six to twelve months of ownership to report on durability, not just first impressions.
  • Reader and community feedback, which we actively track and use to flag recurring issues manufacturers don't always disclose.

We do not accept payment in exchange for favorable reviews, and any product sent to us for free by a manufacturer is disclosed clearly within the relevant article. If a highly-marketed product performs poorly in our tests, we say so — even when that means turning down future review units from that brand.

What Makes Us Trustworthy

We believe trust is earned through transparency and consistency, not credentials alone. That said, our credentials matter: combined, our team brings professional butchery experience, food safety inspection expertise, and thousands of hours of hands-on home processing. We buy most of the products we review with our own money specifically so our opinions remain unclouded by obligation. When affiliate links are used, they never influence which products we recommend — they simply help cover the cost of the meat, equipment, and time that goes into testing.

We also correct our mistakes publicly. If a product's performance changes after a firmware update, a recall, or a manufacturing shift, we update the original review rather than quietly burying the issue.

Our Ongoing Promise

Cleaver Casing exists for the home butcher who wants to break down their own animals, stuff their own sausage, cure their own bacon, and do it with equipment that won't fail halfway through a Saturday. We test in real kitchens and real garages, under real workloads, because that's where these tools actually have to perform. Whether you're processing your first deer or your five-hundredth hog, we're here to make sure the gear you invest in is worth the trust — and the money — you put into it.
